Although she used to destem all of her Gamay in the past, Anne-Sophie Dubois now carbonically macerates all of her fruit, which leads to fresh, fruit-forward, and insanely thirst-quenching juice. ‘Les Cocottes’ is loaded with flavors of tart cherries, pomegranate juice, and white pepper. 

Anne-Sophie Dubois is part of a young generation of vignerons redefining the identity of Beaujolais. Born and raised in Champagne, she caught the wine bug early and spent her formative years learning the ropes in Burgundy. (Far from the usual story of winemakers in Beaujolais.)
