The grapes for this wine were grown in our organic trial at our McCabe's Brook vineyard. At harvest, we carefully select the most pristine fruit, making sure not to any break berries and removing any damaged ones from the clusters. In the winery, whole clusters are gently placed into a tank. After a 21-day carbonic maceration, the partially broken down fruit was foot tread and whole-cluster fermented for 15 days, followed by pressing into a stainless steel tank.
The nose on this vintage feature deep cherry cola notes; rich, fresh, and bright aromatics akin to noveau wines. Light-bodied, but with a lot of oomph, the medium + acidity makes this wine super food-friendly. Firm tannins bounce off the tongue with a refreshing and brief carbonic zip. Serious cherry and snappy plum intertwine and complement a smooth, structured backbone.
Serve room temp, or put a slight chill on it.
About Iapetus Project: Iapetus is the name of the ancient sea which once covered the bedrock that was thrust into the present-day Champlain Valley. Millions of years of geologic processes slowly created a narrative we see manifested in both landscape and environment. It is precisely this narrative that gives shape to Iapetus wine.
Iapetus is produced through a close relationship with the environment. Vineyard management takes into account the importance of soil and vine health and the effect these have on wine. Fermentation is then carried out by yeast foraged from the vineyard microbiome and cellar work aims to preserve each season's uniqueness. These practices are meant to raise the wine directly from the place in which it is grown.
